Zucchini Spaghetti - {Gluten Free option}

i got this from watching The Chew some time ago - it's been a staple at my home: squash spaghetti
(i personally don't add pasta to make it a gluten free meal)

Angel Hair with Zucchini and Mint

What You'll Need:
- 1 pound of angel hair pasta
- 3 tablespoons olive oil plus more for drizzling
- 3 anchovies (minced)
- 1 cup of zucchini (julienne)
- 1 teaspoon red pepper flakes
- 1/2 cup mint
- 1 cup cherry tomatoes (halved)
- 1/2 cup Parmesan cheese
- salt and freshly ground pepper to taste

you can sub zucchini with yellow squash or eggplant for example and leave out the pasta all together (like i do) - also you can use any herbs you'd like (i use basil) but tarragon would be nice too - I've also made this dish with seafood and other veggies - i also pretty much add fresh garlic to everything i cook too (also another great tip add lemon zest) - it's a simple staple to start with and then add onto - it's a great basic dish to play with - it really has unlimited possibilities

Here's What You Do:
-- Bring pasta water to a boil and add salt - then add your pasta
-- While pasta is cooking, heat skillet over medium heat and add olive oil
-- Add anchovies to pain, and stir till they dissolve/melt
-- Add zucchini and cook for about 2 mins until golden brown
-- Add your red pepper flakes (this brings some heat to the dish)
-- Drain pasta *reserve 1/2 cup of pasta water*
-- Add your pasta to the pan with some of the pasta water
-- Season with salt and pepper
-- Let pasta and zucchini combine in pan for about another 2 mins
-- Finally add the tomatoes, cheese, and herbs
-- Serve on a platter and drizzle a little olive oil on top
